Celiac Disease is an auto-immune disease that is triggered by the presence of gluten. Gluten is a protein found in common family of grains, such as; wheat, rye, barley, spelt, semolina, farina, faro, graham, kamut, emmer, durum, wheatberries, einkorn wheat, graham, triticale, brewer’s yeast and various forms of malt. Gluten is a very reactogenic protein and causes auto-immune responses to not only those with a diagnosed Celiac Disease, as you can have gluten intolerance and other sensitivities to gluten protein. Common symptoms of Celiac are fatigue, diarrhea, brain fog, villous atrophy, anemia, etc.

Avoiding gluten is the only treatment for Celiac Disease. In fact, avoiding gluten is a very trending lifestyle as this removes the dangerous protein that affects Celiacs and avoids many processed foods, and cross contaminated foods that litter the food supply from farm – manufacturing – packaging – preparation – to plate.
